Morning Papers #5

Rum/Rhum is made from sugarcane. There are a few common processes. In short, one is using the sugar created from sugarcane to make a fermented beverage and then distill it. Another is to juice the cane itself then allow the sugarcane juice to ferment after which this now lightly alcohol rich beverage is fermented. Each process creates a drastically different flavor experience. I currently perusing the history of rum and its heavy participation in Tiki so you can bet there will be more sugarcane influenced Morning Papers in the near future.
